How to store cooked rice for maximum freshness.

Cool cooked rice as quickly as possible after serving. Spread it in a thin layer on a baking sheet, or divide into shallow containers. The faster it cools, the less time Bacillus cereus has to grow.

Refrigerate within one hour of cooking, ideally within 30 minutes. Rice is one of the highest-risk foods for room-temperature bacterial growth.

Store in airtight containers in the fridge for three to six days. Beyond that, the quality drops sharply and food safety concerns rise.

Reheat rice thoroughly until steaming hot throughout, at least 165°F internal temperature. Reheating to lukewarm does not kill toxins.

Only reheat rice once. Repeat heating-cooling cycles grow bacterial populations and the toxins they leave behind survive subsequent reheats.
