How long does broccoli last? And how to keep the florets from yellowing.

Broccoli wants cold and a little airflow. Stored right, fresh heads last close to a week. Stored wrong, the florets yellow and the stem turns sour within three days.

How to store broccoli for maximum freshness.

    Do not wash broccoli until you are ready to use it. Surface moisture speeds up yellowing and mold.

    Store in a perforated bag or the original packaging in the crisper drawer. Airflow prevents condensation, which causes rot.

    For longer storage, wrap the stem in a damp paper towel and stand the head upright in a glass with an inch of water in the fridge. This keeps it fresh up to seven days.

    Broccoli is sensitive to ethylene. Keep it away from apples, bananas, and tomatoes, which all give off ethylene gas and speed up yellowing.

    To freeze, cut into florets, blanch for two minutes in boiling water, plunge into ice water, drain thoroughly, then freeze in a single layer before bagging.
