How long does salmon last? And how to tell the difference between fresh and fading.
Raw salmon has a short refrigerated window. Timing, temperature, and proper cooking matter for safety; odor and appearance can reveal spoilage but cannot prove that fish is pathogen-free.
Food-safety guidance assumes proper handling, a refrigerator at 40°F or below, and a freezer at 0°F. Harmful bacteria cannot always be seen, smelled, or tasted; follow recalls and discard food that was stored outside safe time or temperature limits.

Storage
How to store salmon for maximum freshness.

Store raw salmon in the coldest part of the fridge, typically the bottom shelf at the back. The door is the warmest spot and a poor choice.

If the original packaging is intact, leave it. Otherwise, wrap tightly in plastic wrap or parchment, then in foil, and place on a plate to catch any liquid.

Cook salmon within two days of purchase. If you cannot, freeze it within the first 24 hours, when quality is highest.

Always thaw frozen salmon in the fridge overnight, never on the counter. Counter thawing puts the outer layer in the bacterial growth zone while the inside is still frozen.

Refrigerate cooked salmon in a shallow, covered container within two hours (one hour above 90°F). Do not wait for it to reach room temperature. Use within three to four days.
