How to store bananas for maximum freshness.

Buy bananas at the ripeness you want to eat them. Greener bananas keep longer; yellow with light spots are ready now.

Hang bananas on a hook or stand to reduce bruising. Pressure points from sitting on the counter accelerate brown spots.

To speed up ripening, place bananas in a paper bag with an apple. The trapped ethylene gas can ripen a firm banana in 12 to 24 hours.

Once bananas hit your preferred ripeness, move them to the fridge. The peel will go brown, but the fruit inside holds for another five to seven days.

For freezing, peel first and either slice or freeze whole in a single layer. Bagging unpeeled bananas in the freezer makes peeling them later much harder.
