How long do tomatoes last? And should you keep them on the counter or in the fridge?
The counter-vs-fridge debate has a clear answer if you separate ripening from storing. Underripe tomatoes belong on the counter. Fully ripe ones you cannot eat today belong in the fridge.
- Counter
- 4-7 days (until ripe)
- Fridge
- 5-7 days (ripe) / 1-2 days (cut)
- Freezer
- 6-8 months (whole or pureed)
Shelf life
How long does tomato last?
Concrete numbers by storage condition. Use the longest viable option you have time for.
| Condition | Time | Note |
|---|---|---|
| Counter, unripe to ripe | 4-7 days | Best flavor when ripened at room temperature. |
| Counter, fully ripe | 1-2 days | Move to the fridge if you cannot use them soon. |
| Fridge, fully ripe whole | 5-7 days | Bring back to room temperature 30 minutes before eating for flavor. |
| Fridge, cut | 1-2 days | Cover the cut side and store airtight. |
| Freezer, whole | 6-8 months | Skin slips off after thawing. Perfect for sauce or soup. |
Storage
How to store tomatoes for maximum freshness.
- 1
Store unripe and ripening tomatoes stem-side down on the counter, out of direct sunlight. Stem-side down prevents air and moisture loss through the natural scar where the tomato was on the vine.
- 2
Move tomatoes to the fridge once they are fully ripe and you cannot eat them within a day. Cold dulls flavor slightly but stops further breakdown.
- 3
Bring fridge tomatoes back to room temperature for 30 minutes before eating. This restores most of the flavor that cold suppressed.
- 4
Cut tomatoes need to be covered tightly and refrigerated. The exposed flesh dries out and absorbs fridge odors within hours.
- 5
To freeze tomatoes whole, wash, dry, and place in a single layer on a tray. Once frozen solid, transfer to a bag. The skin slips off easily after thawing.
