How long does cheese last? And when mold means cut around it versus toss it.

Cheese is one of the longest-keeping dairy products if stored right, but mold rules vary dramatically between hard and soft varieties. The wrong call can mean food poisoning or a wasted block of cheddar.

Storage

How to store cheese for maximum freshness.

    Wrap hard cheese in parchment or wax paper first, then loosely in plastic wrap or a reusable beeswax wrap. Parchment lets the cheese breathe; plastic alone traps moisture and accelerates mold.

    Store soft cheeses (brie, fresh mozzarella, feta, ricotta) in their original packaging if possible. Once opened, transfer to an airtight container.

    Keep cheese in the warmest part of the fridge, typically the bottom shelf or cheese drawer. Very cold storage dries cheese out and can dull flavor.

    If you see condensation building inside the wrap, replace the wrap. Moisture trapped against the cheese is the leading cause of premature mold.

    To freeze, slice or shred hard cheese first, then freeze in airtight portions. Frozen-then-thawed cheese works best in cooked dishes (pizza, casseroles, mac and cheese) rather than on a board.

How to tell if cheese has gone bad.

  • On hard cheese: mold on the surface, which can usually be cut away with a one-inch margin around it.

  • On soft cheese: mold anywhere is a sign to discard the whole package, because the moisture lets mold spread invisibly.

  • A strong ammonia or rancid smell (some cheeses naturally smell strong; rancid is sharper and unpleasant).

  • Slimy, sticky surface texture not present when fresh.

  • Off-color patches: pink, gray, or unusual yellow areas that were not there before.
